But after he reached head chef status, he decided to chuck it all in to try something new. He had taken an artisan cheesemaking course, which prompted a rediscovery of his love for makers, growers and their communities. So Josh brought it all together to start Eat the Wild, curated small group food tours of Tasmania led by Josh — with all meals and beverages provided by him too. It’s a slow, intimate and extremely delicious way to experience the bounties of the remote Australian island.
